There is something so lovely about a spritz. It’s simple but still festive. This zero-proof spritz made with non-alcoholic wine and an herbaceous simple syrup is not only delicious, it is beautiful as well.

ingredients

  • Thyme Simple Syrup Ingredients:
  • ½ cup sugar
  • ½ cup water
  • 5 fresh thyme sprigs
  • Spritz Ingredients:
  • 1 ounce thyme simple syrup
  • 5 ounces zero-proof rosé wine, chilled
  • 2 ounces sparkling water
  • 1 sprig thyme, for garnish
  • 1 lemon peel, for garnish

directions

  1. To make the simple syrup, place the sugar, water and thyme sprigs in a small pan and set over medium heat. Stirring a few times, cook until the sugar is completely dissolved. Turn off the heat and let the thyme steep for 30 minutes. Remove the thyme sprigs and strain through a fine mesh strainer. Set aside to cool to room temperature.
  2. To make the spritz, add 1 ounce of the thyme simple syrup to a wine glass. Swirl the simple syrup all around the sides of the glass. Fill the glass with ice and add the rosé. Gently stir to combine and top with sparkling water. Garnish with a thyme sprig and a lemon peel. Serve at once.

You can find non-alcoholic wine in any grocery or liquor store.

You can also use a non-alcoholic white wine for this zero-proof rosé thyme spritz recipe.

Simple syrup can be made a week in advance and stored in the refrigerator.

Rosemary also works beautifully in place of thyme.
